- 1 cup sugar
- ½ cup water
- 1 tsp ghee / clarified butter
- ¼ tsp cardamom powder
- Take 2 cups of cashew and blend it in a fine powder. Sieve the cashew powder to remove lumps.
- Take one cup of sugar and half a cup of water in a large kadai.
- Boil for 5 minutes and stir well to attain consistency.
- Add the powdered cashew and mix well.
- Stir continuously until a smooth paste is formed.
- Add 1 tsp ghee and ¼ tsp cardamom powder.
- Cook until the mixture turns smooth paste and starts to separate the pan slightly. Do not overcook.
- Transfer the mixture onto the butter paper.
- Now fold using a spatula until the mixture thickens forming a dough. Knead slightly, to form a soft dough.
- Place the cashew dough between butter paper and roll using a rolling pin.
- Now cut into a diamond shape or the shape of your choice. Enjoy your Kaju Katli for a month.
